Eat Fabulous, Feel Fabulous

It’s that time of year when we’re jazzed to clean up our lifestyle, to get things done, turn over a new leaf or just be nicer to ourselves and others. Well, this week we’re gonna help this trend along and share our favorite fabulous vegetables. You know, for all those folks who’ve resolved to eat less meat, to be healthier or to eat more greens. It’s a new year, it’s a new you.

Fabulous No. 1: Baby Spinach
When I was a tomboy kid, spinach was a very dark green, large leafed veggie, and I gotta say, soz Ma, nothing to get excited about. Frankly, I thought Popeye was a little twisted to be downing cans of the stuff.

However, enter stage left the new and triple-washed, baby-leafed bagged spinach. I go through a bag a week, feeling quite chuffed with myself – all those Vitamins– K, C, A, B2; iron, magnesium, etc. Spinach is an easy, uncomplicated leafy green to add to anything, so like, get munching.

Fabulous No. 2: Carrots
They help you see in the dark, right? With carrots, I avoid the baby trend, and go for regular-sized roots, unpeeled and not sitting in water. All that beta-carotene and anti-oxidants: good for your heart, gives your teeth a workout, and they go so well with hummus. I love to snack on carrots, how ’bout you?

Fabulous No. 3: Sweet Potatoes
Why did I pick up my first sweet potato last year? Well, I’m pretty sure it was inspired by a video blog of someone sharing what they eat in a day, very popular those. From that very first bake-off I was hooked. That orange, that taste, that ease of cooking. Fabulous times 3.

More beta-carotene, Vitamins A & C, fiber, and dont’t forget those lovely filling carbs. Make your January an orange one, and no thanks necessary, your orange glow will be sufficient!
